Wash lutefisk about 2-2 1/2 lbs. Cut into sizes desired. Place fish skin side down in covered glass casserole or enamel roaster ( do no use aluminum.) and salt it. Bake 45 min in 350 oven. This should form its own juice. You do want water in the dish or the fish will dry out.

Prepared this way the fish stays white. Serve with lots of melted butter and salt and pepper.
