2 med zucchini squash
1/4 c Parmesan cheese
1/4 c Panko breadcrumbs
1 tbsp of olive oil
1/4 tsp salt
black pepper to taste

Directions:
Preheat oven to 400º. Line backing pans with foil and spray with a vegetable spray.Slice zucchini into 1/4 in slice and toss with olive oil. Place Parmesan Cheese, Panko crumbs, salt, and pepper in a large mixing bowl. Add zucchini slice and mix well with dry ingredients; coating well. Place zucchini rounds on baking sheets in a single layer and sprinkle any remaining breadcrumb mixture over the rounds. Bake for about 25 min, or until golden brown.
