1 lb canned mackerel, flaked (or tuna or salmon)
2 cups cracker crumbs
2 eggs, beaten
2 cups hot milk
1 tsp salt
dash pepper
dash poultry seasoning
1/4 cup butter, melted

Directions:
Directions:
Preheat oven to 375º. In a greased loaf pan, alternate layers of the mackerel and cracker crumbs. In a bowl, combine all the other ingredients, Pour the mixture over the loaf pan. Sprinkle with parsley or paprika. Bake 40 min.

This recipe is from my favorite cookbook- the More-with-Less Cookbook by Doris Janzen Longacre. It is my favorite cookbook, & I used it more than any other one I own. It is very stained and worn, but I still use it now.
