3 tbsp butter or margarine
1 c onion, chopped
1 clove garlic, minced
1 lb ground beef
1 tbsp curry powder
1 1/2 tsp salt
dash pepper
dash each-cinnamon, ginger & tumeric
2 c cooked tomatoes (or can of diced tomatoes)
2 c frozen peas or green beans

In a large skillet, saute the onion & garlic in the butter, add the ground beef & brown it well. Stir in the remaining ingredients. Cover & simmer 25 min. Serve with rice.

This recipe is from my favorite cookbook- the More-with-Less Cookbook by Doris Janzen Longacre. It is my favorite cookbook, & I used it more than any other one I own. It is very stained and worn, but I still use it now. This is a really easy skillet dinner.
