2/3 c rice (or 2 c leftover cooked rice)
3/4 lb ground beef
1 onion, chopped
2 c tomato sauce
1/4 tsp garlic salt
1 tsp sugar
1 tsp salt
dash pepper
1/4 tsp dried oregano
1 tsp dried parsley flakes
1 1/2 c cottage cheese
1/2 cup shredded cheese (Mozzarella or any kind you like)

Brown the beef & onion in a large skillet. Add the tomato sauce, salt, sugar & the other spices. Cover & simmer 15 min. Combine the cottage cheese and cooked rice in a bowl. Put 1/3 of the rice mixture in a buttered 2 qt casserole. Top with 1/3 of the meat-tomato sauce. Continue to alternate layers, ending with tomato sauce. Sprinkle with the shredded cheese. Bake at 325º for 30 min, or until hot and bubbly.

This recipe is from my favorite cookbook- the More-with-Less Cookbook by Doris Janzen Longacre. It is my favorite cookbook, & I used it more than any other one I own. It is very stained and worn, but I still use it now. This recipe can be made a little simpler by using a jar of prepared spaghetti sauce.
