Ingredients: 2/3 c rice (or 2 c leftover cooked rice) 3/4 lb ground beef 1 onion, chopped 2 c tomato sauce 1/4 tsp garlic salt 1 tsp sugar 1 tsp salt dash pepper 1/4 tsp dried oregano 1 tsp dried parsley flakes 1 1/2 c cottage cheese 1/2 cup shredded cheese (Mozzarella or any kind you like)

Directions:Brown the beef & onion in a large skillet. Add the tomato sauce, salt, sugar & the other spices. Cover & simmer 15 min. Combine the cottage cheese and cooked rice in a bowl. Put 1/3 of the rice mixture in a buttered 2 qt casserole. Top with 1/3 of the meat-tomato sauce. Continue to alternate layers, ending with tomato sauce. Sprinkle with the shredded cheese. Bake at 325º for 30 min, or until hot and bubbly. |

Notes: This recipe is from my favorite cookbook- the More-with-Less Cookbook by Doris Janzen Longacre. It is my favorite cookbook, & I used it more than any other one I own. It is very stained and worn, but I still use it now. This recipe can be made a little simpler by using a jar of prepared spaghetti sauce.
