1 box yellow cake mix
1/2 c vegetable oil
4 eggs
1 (11oz) can Mandarin oranges w/juice

Icing:
3 oz pkg instant vanilla pudding
8 oz Cool Whip
1 lg can crushed pineapple

Directions:
Directions:
Mix cake mix, oil, eggs and mandarin oranges in a bowl. Bake in 2 layer cake pans at 325º until test done in the center. Allow to cool. Mix icing ingredients in a bowl and use to frost between the layers and the outside of the cake. It is a very moist cake and needs to be kept refrigerated.

I got this recipe from my mother-in-law, Lorraine Sullivan. She made it often when the family would get together, especially in the summer because it is cool & refreshing. It is delicious!
