1 lg can of Black Beans (drained)
1 jar (14 oz) quartered artichoke hearts (drained)
1 egg
1 1/2 cup Bread Crumbs
1/4 cup finely chopped red pepper
salt, pepper, thyme and chopped onion to taste

1 cup of olive oil
Sour cream and green onion chives

Directions:
Directions:
Pour olive oil into large saute pan or frying pan.
Mix remaining ingredients together in bowl and mash together. Form small patties. (Consistency and size should be the same as crab cakes). Feel free to add or subtract ingredients as needed.
Put patties in olive oil in pan at medium heat (do not use higher setting or they will burn and set off smoke alarm). Cook until crispy then flip. Let rest on paper towels to absorbs extra oil for 1 min.
Serve with sour cream and green onion chives. Makes 6.

Since this is a vegetarian dish, I usually serve it with cottage cheese, and parmesan zucchini, or maybe spanish rice
