9in pie crust
2 tbsp onion, chopped
2 c zucchini, shredded
1/4 c butter
1/2 lb sweet Italian sausage
1 c Swiss cheese, shredded
4 eggs
1/2 c heavy cream
1/4 c Parmesan cheese, grated
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp nutmeg

Directions:
Directions:
Place crust in pie dish. Saute onion in 2 tbsp butter. Add a little more butter and the zucchini, saute for 5 min. Drain. Cook sausage, drain and crumble. Spread zucchini, onion and sausage in bottom of pie shell. Sprinkle with Swiss cheese. In a bowl, beat eggs slightly; add cream, Parmesan cheese, salt and pepper. Pour into pie shell and sprinkle with nutmeg. Bake at 400º for 15 min, then reduce heat to 350º and bake until the center is firm, about 10-15 min. Let rest before serving.

This bakes beautifully and is a very ingredient-flexible recipe. You can omit the crust if you wish. I add more meat and veggies than recipe states to make a fuller pie, but be sure to leave enough room to add the egg mixture over the top.
