2 lb fresh apricot (washed and pitted)
2 lb sugar
2 tsp lemon juice
2 tsp clear gelatin
2 cup water

Directions:
Directions:
In a deep, medium sized bowl place in the pitted apricot and add all the sugar on top, then mix. Cover and leave it until the next day. In a large, open sauce pan, place the apricot with the sugar, water and lemon juice. Cook slowly for 30 minutes and stir most of the time, or until the fruit is soft. Use 1/3 cup of room temperature water and mix in the gelatin. Pour it over the cooked apricot and stir for 3 min. Let it bubble on low heat for 10 minutes. Shut the stove off, stir and let it cool completely. Then place it in clean jars and cover.
