2-1/2 tbsp. butter or margarine
1/2 cup chopped green pepper
1/3 cup chopped green onions
1 cup chopped celery
2 tbsp. flour
1/4 tsp. paprika
1/4 tsp. cayenne
28 ounces tomatoes ( drained and add water to liquid to make 2 cups--heat liquid )
1 small bay leaf
1-1/2 lbs fresh or frozen shrimp, cooked and shell removed
1 tbsp. fresh parsley or 3/4 tsp. dried parsley
Salt to taste
Cooked rice

Melt butter in large frying pan or Dutch oven. Sauté peppers, onions,celery until soft.
Add flour and paprika.
Blend well.
Add hot tomato liquid; cook an stir until smooth and thickened.
Add whole tomatoes and bay leaf and cayenne.
Cover and simmer for 30 minutes.
Add shrimp and cook til shrimp is heated, about 5 minutes.
Add parsley.
Serve over cooked rice.it

This says it makes 6 servings but I think that is a really small serving. Ken and I make this fo the two of us and I think it would do 4 at the most.
