1 c powdered sugar
½ c butter
2 squares melted unsweetenened chocolate
2 pasteurized eggs
5 drops of peppermint extract

Crust
¼ c sugar
¼ c butter
16 graham crackers, crushed

Directions:
Directions:
Filling – Cream together all ingredients, except eggs. Add eggs, one at a time, beating after each one. Add peppermint extract and beat some more. Since this recipe is not being baked, make sure that the eggs are pasteurized.

Crust – Put the crackers in a zip lock bag and crush by rolling a heavy glass or rolling pin over them. Do not seal the bag. Mix the cracker crumbs with the butter and sugar. Press into a 9” pie plate.

Add the filling to the crust. Chill in the refrigerator for a couple of hours or over night. Top with whipped cream or Cool Whip.

This pie is very rich so cut small slices.
