CAKE:
3 cups grated carrots
2 cups sugar
4 eggs
1 1/2 cups oil
3 tsp cinnamon
1 tsp salt
2 tsp baking soda
2 tsp vanilla
2 cups flour

ICING:
1 8-oz pkg cream cheese
1 stick butter
1 box confectioners sugar
2 tsp vanilla
1 cup chopped nuts (optional)

Directions:

CAKE:
Cream sugar and eggs, then add oil. Mix in all the rest.

Bake 350º for 35-40 minutes in 9x13 pan.

ICING:
Cream 1st four ingredients. Ice cake when cool. Add nuts, if desired.
