2 lb boneless bluefish fillets
2 tsp mustard seed
2 tsp Dijon mustard
1 clove garlic
2 tsp coarsely cracked peppercorns
3 Tbsp lemon juice

Directions:
Directions:
Place bluefish fillets skin side down in a flat pan. In a mortar and pestle crush mustard seed with mustard and garlic until blended. Stir in cracked pepper to taste. Spread over fish fillets and sprinkle with lemon juice. Let stand in refrigerator for several hours before grilling. Place in oiled fish grill and put fish 3-4 inches above hot coals. Grill for 8 mins or until fish flakes.
(OR: Grill skin side down over med heat, covered, until cooked through)
