1 Medium Onion, Minced
2 Large Celery Stalks, Chopped
6-8 Mushrooms, Sliced
Handful of Julienne Carrot Sticks
Zucchini and or Summer Squash, Diced
1/4 Cup Fresh parsley, Minced
1 Tsp Dry Basil
1/4 Tsp Salt
1/4 Tsp Garlic Powder
Sherry
2 1/2 - 3 Lbs Haddock
Panko Bread Crumbs
1/2 Cup Grated Swiss Cheese
Butter

Directions:
Directions:
Saute the Onions and Carrots in Butter for 2-3 minutes. Add rest of Vegetables, Parsley, Basil, Salt and Pepper and saute till almost tender. If you have Sherry add a little to this saute and cook another minute or two.

Place 1/2 the Haddock in baking dish.
Spread mixture along center - top with other half of Haddock.
Bake at 400º for 20 Minutes.

Melt 2-3 Tbsp Butter and Add Panko Bread Crumbs.
Top Haddock with Buttered Panko and Swiss Cheese.
Bake another 20 Minutes.

This Recipe came from my Friend Karyn Comeau - I made some changes adding the Fresh veggies and Panko. Never be Afraid to Change Something in a Recipe - Never Know Unless You Try!
