1 lb russet potatoes
2 packages yeast
1 1/2 cups warm milk
1/2 cup vegetable oil
1/2 cup sugar
2 eggs
1 tsp salt
7 1/2 cups all purpose flour
Oil for frying

Glaze:
4 cups powdered sugar
1/3 cup water
1 tsp vanilla

Directions:
Peel and quarter potatoes. Cook in boiling water. Save 1/2 cup cooking liquid then drain and mash the potatoes. Dissolve yeast in the reserved water. Then add potatoes, milk, oil, sugar, egg, and salt. Add flour to make a soft dough. Place in a greased bowl. Cover and let raise until double (about 1 hour). Punch down and raise again (20 minutes).

Working in batches, roll out dough to 1/2 inch. Cut with a 3-inch, floured doughnut cutter. In an electric skillet, heat oil to 375 degrees. Fry a few at a time till golden on both sides. Drain on paper towels. Dip into the glaze made by mixing the sugar, water and vanilla.

This makes several dozen spudnuts and always made our very own little trick-or-treaters happy after they returned from their neighborhood forays. Served with warm spiced apple cider or hot chocolate, the little goblins cast aside their masks and were warm and cozy in no time.
