Bones, neck, and scraps of turkey
2 quarts cold water
1 C chopped celery
2 onions, sliced
2 T butter or margarine
2 T flour
1/8 tsp. mace
2 tsp. salt
1/4 tsp. pepper
1 13 oz can evaporated milk, scalded

Directions:
Directions:
Place turkey scraps in a large kettle and cover with cold water, add celery and onion and simmer 2-3 hours. Remove bones. In small saucepan, melt butter, add flour and when smooth add to soup and cook till slightly thickened. Add mace, season with salt and pepper and simmer a few minutes longer. Add milk and serve immediately.
