1 1/3 toasted pecan halves
2 Tablespoons and 2 teaspoons raspberry vinegar
3/4 teaspoon Dijon mustard
3/4 teaspoon sugar
3/4 teaspoon salt
freshly ground black pepper to taste
1/2 cup olive oil
8 cups mixed salad greens, rinsed and dried
1 cup dried cranberries
2/3 medium red onion, thinly sliced
8 slices Salami
crumbled feta cheese

Directions:

Preheat oven to 400º F. Spread pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until lightly browned and fragrant.
In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper, mix until sugar and salt dissolve. Whisk in olive oil.
In a salad bow, toss together the greens, cranberries, pecans, onions and cheese. Drizzle with vinaigrette, and toss gently to coat. Place slice of salami for garnish.
