1 cup rice
2 cups vegetable broth
1 15-oz can black beans, drained
1 15-oz can Mexican style stewed tomatoes
1/2 cup frozen corn
2 tsp ground cumin
2 tsp chili powder
1 jalapeņo pepper, seeds removed and chopped (optional)
6 or more 8-inch tortillas
1/4 cup green onions
Salsa
Cheese
Sour cream

Directions:
Directions:
Place all the ingredients in a 4 qt slow cooker and cook on low for 4 to 5 hours. If using brown rice, turn up to high for the last 2 to 2 1/2 hours. Spoon out the hot filling and serve on the tortillas. Top with green onions, cheese, salsa, and sour cream.
