8 medium potatoes
8 Tablespooons butter
6 Tablespoons flour
2 1/2 cup light cream or half and half
1/2 teaspoon salt
ground pepper to taste
1 cup grated sharp cheddar cheese
1/2 cup fine dry bread crumbs

Directions:
Directions:
Preheat oven 400º. Peel and dice potatoes and cook until done. Drain potatoes and place in a greased casserole or baking dish. In medium saucepan melt 6 T of butter, blend in 6 T of flour. Gradually add cream stirring constantly. Heat to boiling. Season with salt and pepper. Pour over potatoes and top with grated cheese. Melt remaining 2 T of butter and stir in bread crumbs, mixing until coated. Sprinkle bread crumbs over casserole and bake until cheese melts and casserole is bubbly (approximately 20 minutes).
