Peel and cube 4 large apples, choose variety based on your personal tastes, but Red Delicious works great. Chop 3/4 c nuts into small pieces. Drain 5.5 oz can of pineapple. Grate 1/8 cup of carrots into thin slivers. Combine ingredients with mayonnaise, depending on how "wet" you want the mixture and mix well. Depending on your tastes you may remove the carrots and/or pineapple, but we always have this at Thanksgiving and at minimum, it has the apples, raisins and mayo.

This is a dish that needs to be made the day of because the apples will turn brown, although the mayo helps prevent it. Put a bit of this on the same fork as your cornbread stuffing and YUMMY!! Enjoy!
