CRUMB TOPPING:
1/2 c. brown sugar
2 tsp. butter
1/2 c. chopped pecans
1 c. flaked coconut
CAKE BATTER:
1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
1/2 tsp. maple extract
1/2 c. milk
2 1/2 c. flour
2 c. finely chopped apples
CARAMEL TOPPING:
1/3 c. brown sugar
2 T. butter
1/4 c. cream or whole milk

CRUMB TOPPING: Mix topping ingredients together and set aside while preparing cake*.

CAKE BATTER: Cream sugar and oil. Beat in eggs, baking powder, baking soda, cinnamon, and flavorings. Stir in milk and flour. Fold in apples. Pour batter into a greased 9 x 13 inch pan. Sprinkle crumb mixture on top*. Bake at 325º for 45-50 minutes (check for doneness with toothpick). Prepare caramel topping while cake is baking.

CARAMEL TOPPING: Cook the three ingredients in microwave or on top the stove. Cool until it is a medium, slightly thickened syrup. After you take the cake out of the oven, poke holes through crumb topped cake with a meat fork. Pour caramel over. Serve warm or cold with ice cream, if desired.
