Delicately browned flour gives a rich color and delicious flavor to gravies.

Spread white flour about ¼ inch thick in the bottom of a heavy skillet and place over moderate heat, stirring frequently until flour takes on an even tan color.

Cool and store in a glass jar or other moisture proof container.

NOTE: Browned flour has only about half the thickening power of white flour so a sauce or gravy recipe calling for ¼ cup white flour will require about ½ cup browned flour. The browner the flour – the less its thickening power will be.
