2 cans of canned chicken breast
4 green onions sliced
1/2 cup diced artichoke hearts (if you have them)
1/2 cup diced carrots
1/2 cup diced celery
1/2 cup diced cilantro
1/2 teaspoon garlic salt
black pepper
4 red or yellow peppers
1/2 to 3/4 cup of plain non fat Greek yogurt or 1/2 cup of Mayonnaise

Directions:

Mix all ingredients except peppers together in a bowl. Use pepper and garlic salt to taste. Clean peppers and cut in half, scoop out seeds. Fill half peppers with the chicken salad.
