On a wooden board or smooth surface, pile the flour into a small mound. Add enough water and egg (if using) to make a firm dough. Work the dough until smooth and well kneeded.

If using a pasta machine, stretch the dough to thin pieces.
Take one piece at a time and break away pieces with your hands and lay on a floured surface until ready to cook.
Bring water to boil (add salt) and add le sagnette. When they come to the surface, remove with a spatula and serve with your favorite tomato sauce (sugo)
