2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup Parmesan cheese
1 1/2 cups milk
3/4 cup Bisquick baking mix
3 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
Directions:
Heat oven to 400º. Grease 10" quiche dish or 10 1/2" pie plate. Sprinkle zucchini, tomato, onion, and cheese in bottom of dish. Beat remaining ingredients until smooth, about 1 minute. Pour into dish. bake about 30 minutes, until knife inserted in center comes out clean.
