Ingredients:  
8 chicken thighs, skin removed
3 1/2 cups chicken broth
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup onion, chopped
3 large garlic cloves, chopped
3 stalks celery, sliced
2 - 4 chipotle chilies in adobo sauce, chopped up & some of sauce from can
Bay leaf (optional)
Salt & pepper to taste
1 cup uncooked rice
1 to 2 cans of your favorite canned beans
1 large can chopped tomatoes

Directions:
Directions:
Put the chicken in the crock pot & put in all the ingredients.
Cook on low for 6 - 9 hours until chicken is tender.
Remove chicken; take the chicken off the bones.
Shred chicken & put it back in pot.
Mix all back together.

Substitute 3 tins of Rotel tomatoes for the chopped tomatoes. If you do, you can omit the chilies.
