1/2 cup butter
1 large onion, ground
3 jalapeno peppers, seeded and ground
1 small green pepper, seeded and ground
2 lbs raw crawfish, peeled and ground
3 - 10 3/4 oz. cans cream of mushroom soup, undiluted
Salt
Pepper
Garlic powder
Red pepper
Chopped parsley (optional)

Directions:
Directions:
1. Melt butter over low heat in a 10-inch skillet; add onion and peppers. Saute' vegetables until tender, about 5 minutes.
2. Add ground crawfish; cook 7 minutes over low heat, stirring frequently. Stir in mushroom soup; add seasonings, as desired.
3. Remove from heat; garnish with parsley, if desired. Serve warm with buttery round crackers.
