2 celery ribs, chopped
1 medium onion, chopped
1 medium green pepper, chopped
1 medium carrot, chopped
2 T. olive oil
1/4 c. flour
1 c. chicken broth
1 lb. Smoked kielbasa or polish sausage, cut into 1/2" pieces
Hot cooked rice
1 can (14 1/2 oz.) diced tomatoes, undrained
2 tsp. oregano
2 tsp. dried thyme
1/8 tsp. cayenne pepper

Directions:
Directions:
In a large skillet, saute celery, onion, green pepper and carrot's till tender. Stir in flour till blended, gradually add broth. Bring to a boil. Cook and stir for 2 minutes or until thickened.
Transfer to a 3-qt. slow cooker. Stir in tomatoes, oregano, thyme, and cayenne. Add sausage. Cover and cook 3-4 hours till tender. Serve over rice.
