Large zuchinni (not too huge)
2 T melted butter
3 C soft bread crumbs
1/2 C grated parmesan
1 small onion minced
1 tsp salt
1/2 tsp black pepper
2 beaten eggs
1 C (or more) grated mozarella cheese
More parmesan for sprinkling on top.

Directions:
Directions:
Cut ends off and soak zuchinni in boiling water for 5 minutes. But in 1/2 lengthwise.
Scrape zuchinni out and mix with the rest of ingredients. Put mixture back in zuchinni shell and cover with grated mozarella and parmesan cheese. Bake at 350º for 30 minutes.
