Triple Ginger Cake
1 2/3 Cups flour
1 tsp Ground ginger
1 tsp Cinnamon
1tsp Baking soda
1/2 tsp Ground cardamom
1/2 tsp Salt
6 TBSP (2 ounces) Crystallized Ginger - minced
1/2 Cup Butter - unsalted
1/2 Cup Golden brown sugar
1/2 Cup Granulated white sugar
2 Eggs Extra large
2 TBSP Grated Fresh Ginger
1/2 Cup Buttermilk

Directions:
Directions:
Mix the first 6 ingredients in a medium bowl.
Beat butter and sugars until creamed.
Add 1 egg at a time after the butter is creamed.
Mix in the fresh ginger and 3 TBSP of the crystallized ginger
Alternate blending in the dry ingredients and the buttermilk. Always begin and end with the dry ingredients.
Grease and flour a loaf pan. Pour the mix into the loaf pan. Top with remaining
3 TBSP of crystallized ginger. Press the crystallized ginger down slightly.
Bake: 350 degrees for 50 minutes.
