1 Cup Yellow Corn Meal
1 Teaspoon Salt
1/2 Teaspoon Baking Soda
1/3 Cup Oil
2 Large Eggs, Beaten
16 Ounce Can Cream Style Corn
1 Large Onion, Finely Chopped
8 Ounces Cheddar Cheese, Shredded
1/4 Cup Jalapeño Slices, Finely Chopped
1 Pound Crawfish Tails

Directions:
Directions:
Preheat oven to 350º. In large mixing bowl, combine cornmeal, salt, and soda. In small bowl, beat eggs thoroughly. Add oil, eggs, corn, onion, cheese, jalapeño, and crawfish to cornmeal mixture. Mix well. Pour into greased pan. Bake until golden brown - 40-50 minutes.
