1 T Olive Oil
2 Large Chicken Breasts
Salt and Pepper to taste
2 Slices Bacon
1 Large Red Onion, chopped
1 lb. Carrots, sliced
3/4 cup white wine
1 T Honey

Directions:
Directions:
Preheat oven to 350º.

In a large pot (or Dutch oven), heat olive oil over high heat. Season chicken with salt and pepper; add to pot. Cook until chicken is browned (about 8 minutes). Transfer chicken to plate.

Reduce to medium heat and add two slices of bacon. Cook until bacon is almost crisp. Ad red onion and carrots and cook until union is lightly golden. Add wine and honey. Bring to a boil while scraping bottom of pan. Add one cup of water. Return to boil.

Transfer to casserole dish, place in oven, and cook through (about 35 minutes).

Personal Notes:
This is great served with a salad and heart-healthy pasta. Instead of the pasta, you can throw in red or new potatoes (cleaned and unpeeled) when you add the cup of water. Yummy! Serves 4 if served with salad and pasta or potatoes.
