1 log of hot breakfast sausage
1 can of Ro-Tel tomatoes
1 package of cream cheese
8oz mix of shredded jack and cheddar cheese
1 bag of Frito scoops

Directions:
Directions:
Take out cream cheese to soften. Cook sausage until brown. Drain on paper towels to absorb grease. Pulse in food processor to break up big pieces. Put the sausage in a mixing bowl. Open Ro-Tel and reserve liquid. Wipe out processor and pulse tomatoes once or twice. Pour tomatoes in bowl with sausage. Rinse and dry the processor. Cut up cream cheese and chop in processor with reserved liquid. Pour in mixing bowl. Add half of the cheese and mix well. Lightly spray a Pyrex pie dish with no stick cooking spray and fill with mixture. Top with other half of shredded cheese. Cover with no stick foil and bake for 20 minutes at 350 degrees. Remove foil and cook for 10 more minutes. Serve immediately with Frito scoops.
