1 TBL olive oil for chicken
1/3 cup olive oil for dressing
4 boneless skinless breast halves
1/2 tsp ground pepper
1 clove garlic, pressed
2 TBL balsamic vinegar
1 shallot minced
1/2 cup sundried tomatoes in oil, chopped
1/2 cup basil, fresh, chopped
12 oz baby spinach leaves
1 ripe avocado, sliced

Heat 1 TBL oil in large skillet, med high heat. Salt and pepper chicken. Cook turning once, till juice runs clear, about 12 minutes. Slice into thin strips and place in large bowl. In separate bowl, whisk together salt & pepper, garlic and vinegar. Slowly whisk in remaining olive oil. Stir in shallots, tomatoes and basil. Spoon 1/4 cup dressing over chicken and toss to coat. Toss spinach with remaining dressing and divide among 4 serving plates. Top evenly with chicken and avocados.
