Roasted red pepper and tomato soup (organic)
Frozen sweet corn
Basil pesto
Low-fat plain greek yogurt

Combine 4 cups soup, 1 1/2 cups corn kernels and 2 tbsp. pesto in a large sauce-pan. Cover and bring just to boiling. Reduce heat and simmer, partially covered for 3 mins. Ladle into 4 bowls and top each with a dollop of yogurt.
