2/3 cup canning salt
3 quarts water
8 cups sliced yellow squash
2 12 cups sugar
2 cups vinegar
2 tsp. mustard seed
2 onions sliced
2 green peppers seeded and sliced
1 Jar (4 oz.) Pimiento slices or about 6 oz. roasted peppers sliced

Directions:

Stir salt in water add squash weigh down to keep squash under the salt brine. Let set for 3 hours drain well. Combine sugar, vinegar and mustard seeds in a large pan and bring to a boil. Add squash, onion, peppers, and pimientos. Return just to a boil, pack into jar. Make sure squash mixture is covered with brine, put lid on and process for 10 minutes in a water bath.
