2 quarts chopped cucumbers (about 8 medium)
4 cups chopped onions (about 4 medium)
2 cups chopped sweet green pepper (about 2 medium)
2 cups chopped sweet red peppers (about 2 medium)
1/2 cup salt
6 cups sugar
4 cups cider vinegar
2 Tbsp. celery seed
2 Tbsp. mustard seed

Directions:

Combine cucumbers, onions, green and red peppers in a large bowl; sprinkle with salt and cover with cold water. Let stand 2 hours. Drain thoroughly; press out excess liquid. Combine sugar, vinegar and spices in a large sauce pot. Bring to a boil. Add drained vegetables and simmer 10 minutes. Pack hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath. Yield: about 16 half pints.
