Crust:
1 C flour
2 T sugar
½ C oleo

Filling:
2½ - 3 C rhubarb (cut fine)
1 ½ C sugar
2 heaping T flour
3 egg yolks
1/3 C cream (half and half or canned milk)

Topping:
3 egg whites
1/2 C sugar

Directions:
Directions:
Prepare crust: Blend ingredients and press into an 8x8 or 9" pie pan. Bake for 25 minutes at 375º.

Prepare filling:
Stir together well and cook until thick and tender. Pour over crumb crust.

Topping:
Beat egg whites with electric mixer. When foamy, start adding sugar slowly and continue beating until it stands in soft peaks. Pat on pie and brown in 350 degree oven for 15-20 minutes. Remove, cool, and serve.
