1 (10 oz.) pkg. yellow rice (I like Vigo brand)
1 cup diced tomato
3/4 cup diced red bell pepper
2 green scallions, sliced
2 oz. jar pimientos
2 1/2 cups chopped cooked chicken
1 cup petite peas, frozen
1/4 cup finely diced celery
1/4 cup spanish olives, sliced
Dressing:
2 tbl. tarragon vinegar
1/3 cup olive oil
1 1/8 tsp. sea salt
1/8 tsp. dry mustard
1/8 tsp. Tabasco
1/4 tsp Accent or seasoned salt

Directions:
Directions:
Cook yellow rice according to package directions. Pour dressing over rice while warm. Let rice cool, then add all remaining ingredients. Mix well. Serve on lettuce leaves with lemon wedges for garnish, or garnish in a large serving bowl. Beautiful, colorful and low fat.
