1 cup instant couscous
1 cup water
1 garlic clove, crushed and minced
2 tbl. olive oil
Juice and zest of 1 lemon
Zest of an orange
2 red, yellow, or orange bell peppers, roasted and chopped
1 small red onion, chopped
2 tbl. chopped fresh basil
1/2 cup crumbled feta cheese
Sea salt and freshly ground pepper to taste

Directions:
Place couscous in mixing bowl. Combine water, garlic and oil in small saucepan and bring to a boil. Pour over the couscous and cover. Allow to sit for 15 minutes. Sprinkle with lemon juice and zests of lemon and orange. Fluff with a fork, add remaining ingredients and mix well. Add salt and pepper and taste to correct seasonings.
