2 lbs. zucchini - cut in cubes and parboiled in salted water until just tender (do not peel)
3/4 C. crushed crackers
1 small onion, chopped
1 C. milk
3 beaten eggs
1 1/2 C. grated sharp cheddar cheese

Directions:
Directions:

Mix together, using half of cheese and seasoning lightly with salt and pepper. Pour into lightly greased round baking dish. Sprinkle remaining cheese on top.
Bake 45 to 50 minutes at 350 degrees.
