14 oz can of waxed beans
3 celery stocks - chopped
1 gherkin- finely chopped
5 oz olive oil
4 tablespoon white wine vinegar
1 garlic clove - finely chopped
2 teaspoon dijon mustard
1 tablespoon chopped parsley
fresh chives for garnish

Directions:
Directions:
Drain the beans and rinse well
place the beans, celery and gherkin in a bowl
whisk the olive oil, vinegar, garlic, mustard and parsley in a bowl and season to taste with salt and pepper
Pour the vinaigrette over the bean mixture and toss well
transfer to a serving dish and sprinkle with chives
Can serve at room temperature or chilled
