2 cups cooked rice
4 T peanut oil
1 lb pork, chicken or beef sliced 1/4 inch thick
1 cup celery, sliced
1 cup green onion, sliced
11/2 cups fresh mushrooms sliced
1 red bell pepper, sliced
1 8 oz can water chestnuts, drained
1 8 oz can sliced bamboo shoots, drained
8 oz fresh snow pea pods
1 T fresh ginger root, grated
1 T cornstarch
1/4 cup orange juice
1/4 cup soy sauce
1/4 tsp garlic salt
1/2 cup cashews

Directions:
Directions:
Heat oil in skillet, add meat and stir fry over high heat two minutes. Add all vegetables and ginger root: site fry 3-5 minutes until vegetables are tender crisp. Mix cornstarch, orange juice, soy sauce and garlic salt: pour over vegetables and meat and cook until glaze thickens. Add rice; toss mixture coating everything with glaze. Garnish with cashews
