1 14 ounce can of artichoke hearts
2 Tbs. butter
1/4th. cup chopped onion
1/4th. cup chopped celery
2 Tbs. flour
2 cups chicken broth
2 Tbs. fresh lemon juice
1 bay leaf
1/4th. tsp. salt
dash of white pepper
dash of ground thyme
1 pint half and half
1 egg yolk, beaten

Directions:
In a soup pot, melt butter; saute onion and celery until tender. Do not brown the butter. In a blender or food processor, puree artichoke hearts, celery and onion. Return mixture to soup pot. Add flour and cook for 1 minute, stirring constantly. Add broth and lemon juice, stirring until well blended. Add bay leaf, salt, pepper and thyme. Cook covered for 20 minutes or until slightly thickened. Remove from heat. Add cream to the yolk and stir into the soup. Let sit for 10 minutes before refrigerating. Chill thoroughly. Remove bay leaf. Blend soup mixture until smooth. Serve with a lemon slice. Enjoy!
