2 c. instant mashed potatoes (prepared)
1 med onion - chopped
1 can (14 1/2 oz) low sodium chicken broth
1 can (14 1/2 oz) cream of chicken soup
1/8 tsp. pepper
3 Tbsp. cornstarch
12 oz. Fat Free Skim Milk
1 c. shredded reduced-fat cheddar or velveeta cheese

In a large saucepan, combine the potatoes, onion, broth and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 to 18 minutes or until the vegetables are tender. Combine cornstarch and 1/4 cup of milk until smooth; stir into potato mixture. Add the remaining milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the cheese until melted.

We tweaked this recipe to make it much more healthy and it turned out very good as well. You will probably need to double the recipe. We always do!
