5 to 6 large eggs
5 cups half-and-half
3 1/2 cups whipping cream
Dash of salt
1 1/2 cups of pecans
2 1/4 cups brown sugar light or dark
1 1/4 cups water
6 tablespoons melted butter
3 teaspoons vanilla

Directions:
Directions:
Melt butter and add pecans, cook on low until golden brown. Set aside. Combine brown sugar and water, bring to a boil and cook 2 minutes. Beat eggs in large bowl until thick and frothy, about 5 minutes, then pour water and brown sugar mixture over egg mixture and keep beating egg mixture. Beat with electric mixer until thick. Stir in vanilla, half-and-half, salt and whipping cream. Put in freezer. Run ice cream freezer for a while until ice cream starts to get thick then add pecans. You can add sooner but the pecans will all go to the bottom of the freezer.
