8 cups slightly stale olive focaccia bread
1 pound of bacon
1/2 cup onions chopped
1/4 cup green bell peppers chopped
8 cloves of roasted garlic chopped
8 sun-dried tomatoes chopped
1/3 cup green onions chopped
1/3 cup of white wine
1/4 cup unsalted butter
2 1/2 cups of milk
1/2 cup heavy cream
8 large eggs
8 oz pepper jack cheese shredded
8 oz Monterey jack cheese shredded
1 cup light sour cream
1/2 cup Parmesan cheese shredded
1/4 cup Parmesan-Romano-Asiago cheese shredded
salt to taste
swamp dust or Slap Ya Mama seasoning to taste

heat oven to 325º

I a large skillet cook bacon to crisp. Remove and pat off grease, then chop and set aside.

In same skillet with bacon grease, saute onions, peppers, tomatoes and garlic. Add white wine and bring to a boil. Cook until vegetables are soft and only a scant amount of liquid remains. Remove from heat and set aside to cool.

Break bread into small pieces and place in a large mixing bowl. Add milk and cream and stir well, coating all of the bread. Allow to sit for at least 5 minutes.

Melt butter. Pour into 10x13 casserole/baking dish. Tilt to coat the pan thoroughly. Pour extra butter into bread mixture and stir. Add chopped bacon to bread and stir.

Beat eggs. Add pepper jack and Monterey jack cheeses to egg mixture, and salt and seasoning to taste. Fold egg mixture into bread.

Pour mixture into baking dish. Cover with foil and bake for 1 hour. Uncover and bake for additional 15 minutes.

Remove from oven. Raise oven temp to 375º.

Spread sour cream on top of bread mixture. Cover with Parmesan, and Italian cheese blend.

Bake uncovered until lightly brown approximately 10-15 minutes.

Remove from oven and allow to set for 5 minutes.

Cut in squares, serve and enjoy!!!
