1 large tub of Coolwhip
1 can (20oz) crushed pineapples
1 package pistachio pudding
1 cup mini marshmallows
1/2 cup chopped pecans (optional)
Maraschino cherries for decoration

Directions:
In a medium sized bowl mix all of the ingredients together except the cherries. You can use the bowl you plan on serving it in to save on clean up. Decorate the top with a few cherries. Chill for an hour or overnight.

This is a recipe my Grandmother gave me at my bridal shower. She knew how little cooking or baking I do so kept it very simple. It's light and refreshing and is always a hit. Great for a summer barbecue.
