8 tbl. (1 stick) butter, softened
6 ounces extra-sharp, grated cheddar cheese
2 ounces parmesan, freshly grated
1/2 tsp. sea salt
1/2 tsp. cayenne pepper
1 1/2 cups all-purpose flour
Pecan halves, optional

Directions:
Directions:
Preheat the oven to 350º. Mix the butter with the cheeses and the seasonings in a large bowl. Add the flour and knead into a smooth dough.
Roll the dough into a cylinder and cut crosswise into 1/2-inch disks. Top each disk with a pecan half, if desired.
Bake until golden; your nose and eyes will tell you when they're done (about 15 minutes). Remove from pan with a metal spatula (it would aid in removal if you lined your pan with parchment before adding cookies). Cool on metal rack. Serve or store in an airtight container.
