Pork:
2 lbs. pork tenderloins (cut into 2" slices)
1/2 t. salt
Coarse black pepper

Apples:
2 T. butter
3 Granny Smith apples (thickly sliced )
1/2 c. thinly sliced shallots
1 T. chopped rosemary
1 1/2 t. sugar
1/4 t. salt

Sauce:
1/2 c. apple cider
1/4 c. chicken broth
1/2 t. rosemary chopped
1/4 c. heavy cream
1/2 t. salt

Directions:
Directions:
Place pork between saran and flatten to 1/4 inch. Season both sides with S&P.. Saute meat on both sides in hot skillet until well browned and cooked. Transfer to plate and keep warm.

To prepare apples,reheat pan and add butter. Add apples, shallots rosemary, sugar and salt. Saute until golden and tender. (about 8 mins. ) Transfer to plate.

To prepare sauce , add cider, broth and rosemary to pan. cook, whisking up browned bits about 5 minutes. Add heavy cream. Reduce heat and simmer until sauce thickens about 5-10 minutes. Add S&P.
Return apples and pork to pan. Simmer several minutes. Serve 6.

This is a tasty fall recipe . I serve with rice and grilled asparagus. Very good for company.
